"Origine" ancient cereal blend
"Origine" is a mix of ancient cereals designed for high hydration doughs and Roman-style pizza in pala. It is a blend of low-refining flour enriched by the presence of wheat germ, spelled flour and Khorasan flour. Spelled flour is rich in vitamins and minerals (potassium and magnesium) and is characterized by its high digestibility. Khorasan wheat, whose name meant "where the sun originates", was formerly cultivated in Iran and is a "pure" cereal (never hybridized) rich in proteins and mineral salts (magnesium, potassium, sodium). Both of these cereals are highly digestible and give pizza and bread an extremely delicate taste.
- Pizzeria: particularly suitable for the production of Roman-style pizza in shovel with leavening 24/36 hours.
- Bakery: suitable for the production of soft pasta with a long leavening time of 18/20 hours
